Watching E1 and felt your pain when it comes to Shop Tables. Looking for Flexibility and Multi Purpose. My shop is in the basement so most everything needs to be mobile. In theory, I have a wood shop, sewing shop, and general workbench space. The shop can be reconfigured in less than 10 minutes. The table height of the three rolling benches is the same as the Table Saw. Dolly's were built for 3 of my machines - Single Needle, Double Needle, and Serger. The smaller table becomes a workbench. One table gets stored in its garage. And the third floats in the middle. The Table Saw has its own garage.

I hope that this will give you some ideas to ponder.
